Thoughts and notes of a researcher in plant genetics and nutritional epidemiology in Japan and the U.S. with a wide range of interests - choral activities, photography, nature, travel, and drawing. L'épanouissement personnel means personal development and fulfillment. Still in the middle of it, enjoying the process.

Low-temperature tolerance
These bottles of honey showed different tolerance to low temperature. The one on the left contains honey harvested in China and Argentina, and solidified in my kitchen where it is as cold as in the fridge. On the other hand, the honey that was collected in Canada never hardened. It might be just a coincidence, but it's interesting to think that Canadian honey is more tolerant to cold weather.
